Cowboy Hot Tamale Pie

Since I am A Cowboy’s Wife, I thought I’d share a few cowboy recipes from now on.  First off is Tamale Pie!  Recipes like this are great to feed larger crowds.  This recipe serves about 6.

INGREDIENTS:

  • 1 1/2 pounds lean ground beef
  • 1 large onion, chopped
  • 1 teaspoon garlic, minced
  • 1 teaspoon seasoned salt
  • 1 package chili seasoning mix
  • 1 (16 ounce) can tomatoes
  • 1 1/2 cups cooked whole kernel corn, drained
  • 1 (3 1/4 ounce) can pitted black olives, drained
  • 1 cup yellow cornmeal
  • 1 teaspoon salt
  • 2 1/2 cups cold water
  • 1/4 cup chopped canned pimiento
  • 1 cup shredded Cheddar cheese

DIRECTIONS:

Brown ground beef in skillet, breaking up meat with fork. Add seasonings and tomatoes; simmer 5 minutes.  Stir in corn and olives.  Combine cornmeal, salt and water; cook, stirring, until thick.  Add pimento.  Line greased, shallow 2-quart baking dish with part of cornmeal mush. Pour in beef mixture and make a border of remaining mush around edge of baking dish.Bake at 350 degrees F about 40 minutes.  Sprinkle with remaining cheese and bake 5 minutes longer.

    Smokin hot recipe, AND it’s a crowd pleaser :)Ooh, and I need an expert’s opinion on this, what’s your thoughts on the inclusion of raisins in traditional tamales?

    Tamales are great but when you put the word pie in there too it makes it sounds even better haha. I’ll have to try it out.

    Wow, I’ve never heard of that or tried so I wouldn’t be one to say to be honest. I would probably prefer them without but I like things plain. Sorry:)

    OMG. My Mom used to make something very much like this. I’d forgotten about it until you posted your recipe, Lori.

    This is serious comfort food for southern folk, which is where my roots draw back to. Us kids used to fight over who got to eat the browned bits lining the side of the casserole dish.

    Yeah, this recipe is THAT good.

    Howdy Kate! I really want to make this but I’m completely out of groceries:( We go next week. I love this and I make something very similar for the cowboys, or at least I did when I cooked back then. It was always a hit.

    I’m never lucky enough to get any brown bit because my kids are right there licking the pans, utensils, and anything else that has food on it! Geez, teenagers.

    The Cowboy Hot Tamale Pie had to have been posted just for me! I’m one of those chili nuts who will try to find a recipe for chili ice cream … or anything else where chili powder can be used. This recipe looks like something I could serve almost every day. Now, if it only had a picture.
