Fall is the perfect season for apples. I’ve made apple jalapeno jelly and french toast casserole, but today wanted to share a quick & easy alternative to the traditional apple pie. If you’ve followed me long enough, then you’ll know I just tend to use whatever I have in the kitchen and I try to make it all easy as possible. And since I have bigger boys (aside from Truett), I need something that they can grab-n-go but can still hold them over til supper time. Today I bring you, Easy Apple Pie, for man hands! Gosh I’m creative with the titles huh?
Anyhoo! My mom was the inspiration for this. She made cute little hand pies using pie crust. Well, I didn’t have any pie crust and sure didn’t feel up to making one so I used what every kitchen has….biscuits! Yep, I’m THAT lazy! And since my cute little pies turned out to be not so cute, big pies, I just had to go with it, you know? Keepin’ it real yo!
I know that most people use granny smith apples for pies but I used what I had on hand. Since I live so far from town, I just have to go with the flow…….
I gotta admit too, it’s like you need a degree to know what all the apples are and the best way to use them. I walked into our Walmart and saw like 5 different types! It’s nice that they offer a variety but I’d love to see some signage that explains the best way to use the apples!! Don’t ya think? I know on the front of the apple bins there are short descriptions like ‘sweet and juicy’ but I need more help when choosing apples for baking or cold salads, etc.
Hey, and if these pies aren’t your thing, try this Caramel Apple Upside-Down Cake! DROOOOOOOOL! I like to visit sites like Walmart.com, Kraft.com, etc because their recipes are simple. I saw this cake on walmart.com and knew I could make it, but if you make it before me, let me know how it is!
Back to the pies….You could definitely use only one biscuit instead of two and create an empanada instead of a pie. I used the big Grands biscuits, which made for huge pies but I bet the honey butter biscuits would be awesome to use! Maybe next time!
And really, you just roll out the dough, put your apple mixture in, and either fold over like a fried pie or add another biscuit layer and use your fork to seal.

You must have read my mind I have some apples I need to use.Looks good- my Mom made the ones like your Mom and called them turnovers. Thee biscuit looks easier!
