It’s a Honey: Onion, Bacon, Pear Galette with Marmalade Mascarpone Cheese

Cooking spray
1 frozen pastry sheet (about 9 ounces)
1 medium red onion, thinly sliced (about 1 cup)
1 tablespoon olive oil
5 slices of crisp cooked bacon (see microwave tip)
1 teaspoon honey
½ teaspoon Habanero Hot Sauce
2 peeled Bartlett peas, peeled and sliced (less than ¼” thick about 1” long
½-1 teaspoon (to drizzle, doesn’t have to be accurate measurement)

Topping ingredients:
1 cup corn flakes, crushed
½ teaspoon hot sauce
½ teaspoon honey
½ cup grated white cheese (shredded Muenster, Monterey Jack, Fontina, or Provolone)

Marmalade Mascarpone ingredients:
3 tablespoons orange marmalade
½ cup Italian Style Creamy Mascarpone Cheese

Garnish: 1 tablespoon chopped fresh chives


Thaw pastry sheet (covered) at room temperature for 40 minutes or overnight in the refrigerator. Preheat oven to 400 degrees F. Coat a large cookie sheet with cooking spray, set aside.

In a large frying pan, over medium-high heat begin to heat sauté onions in oil for 3 minutes, stirring occasionally. Cut bacon into ½” pieces, add to onions along with honey and hot sauce, cook for 3 minutes. Adjust time and heat as needed until onions are golden brown. Meanwhile, unfold pastry dough on the center of a cookie sheet in about a 9” x 10” rectangle. Distribute pears, single layer, over dough leaving about 1.5” edge. Drizzle with honey. Top the pears with onion-bacon mixture; set aside.

In a small bowl, crush corn flakes with hands; stir in hot sauce, honey, and cheese. Sprinkle corn flake mixture over onion-bacon mixture. Fold 1-inch pastry edges and corners over onion/corn flake mixture, pinching corners and edges together to help hold. Bake in oven for 30-35 minutes; turn off oven, leaving galette in oven for 5 additional minutes. Remove from oven; cool 5 minutes.

To make marmalade mascarpone: in a small bowl stir until blended marmalade and mascarpone! To serve: slice individual pieces of galette, dollop with a spoon of marmalade mascarpone, sprinkle with fresh chives. Serves 4-6. This is a scrumptious dish can be served warm or at room temperature!

Bacon Tip: An easy way to cook the microwave in the microware. Lay bacon on 4 stacked paper towels and cover with a paper towel. On high heat cook for 3 minutes, remove any crisp bacon and continue at 30-minute intervals until all bacon is crisp.
