Meal Solutions – Tortellini, Tomato Soup with Grilled Cheese and Chicken Sandwich

It’s time for another round of Meal Solutions! You can read the introduction of the program on my Sloppy Joe recipe.

This week’s meal solution ingredients from Walmart consist of the following items:

  • Campbell’s Tomato Soup (Family Size Can) 16 oz – $1.48
  • Campbell’s Chicken Noodle Soup (Family Size Can) 16 oz – $1.48
  • Great Value Saltine Crackers – $1.38
  • Great Value White Sandwich Bread -
  • Nature’s Own Honey Wheat Bread – $2.36
  • Kraft Velveeta – $4.49
  • Pillsbury Fudgie Brownie Mix – $1.37

It’s actually a great list of items for a warm meal at home. Total comfort food in fact!  I’ll be using the Tomato Soup, Nature’s Own Honey Wheat Bread, and the Pillsbury Fudgie Brownie Mix.

PRODUCTS I’M ADDING/SUBSTITUTING

Instead of using a block of Kraft Velveeta, I’ll be using the Kraft Velveeta slices since we are making sandwiches.  I’m also adding some Spinach Tortellini from Barilla and a small can of Swanson Premium Chicken Chunks. If you have leftover chicken, you could totally use that too!

MY MEAL SOLUTION

I love tomato soup so I was ready to eat this!!  Now if it was just me, I would have left the soup plain but since I have boys to feed that need fillers, I decided to add some Spinach Tortellini and oh my, it’s sooooo good!  I boiled the tortellini first, set it aside and then made the soup with milk instead of water.  I poured the tortellini in and warmed together.

For the grilled cheese, I decided to use Kraft Velveeta slices and also added some chicken chunks from Swanson.  The boys really like it that way and again, it’s an added ingredient that fills them up.

The plate is Oneida. I love the soft square look don’t you?  Adding a circle bowl for contrast.

    Mmmm I love tomato soup but I’ve never thought of adding pasta too it. Usually I just dip my grilled cheese right in it.

    With those ingredients, I think I’d make some homemade chicken nuggets by cutting up fresh chicken strips, crusting them with crumbled saltines and frying them. Then I’d cube the honey wheat bread and bake it to make croutons for the tomato soup.

    I’ve tried the occasional slice of meat in my grilled cheese but never chicken breast. It looks delicious! Thanks for sharing.

    I was just wondering, will it be okay to add some spices? I mean chili powder. I’m the only girl on the family and my boys are a lover of hot and spicy meals.

    Sometimes a simple meal like a grilled cheese and tomato soup is all it takes… when you add a little tortellini… it’s awesome :D
