If you are new to my blog, then you may not know that I gave a Hamilton Beach Standmixer away a while back. All I asked from the winner is a photograph with the mixer. Today, I got pictures of the winner using the mixer with a recipe! Thank you Misti for submitting a recipe along with the photographs! BTW, I LOVE THE CANISTERS and THE PLATE!!
INGREDIENTS:
- 1 c. yellow corn meal
- 1 c. flour
- 1/2 c. sugar
- 1/2 tsp. salt
- 4 teaspoons baking powder
- 1 egg
- 1/4 c. shortening. soft
- SUGAR
DIRECTIONS:
Sift together dry ingredients into A Hamilton Beach Mixer, add egg, milk and shortening. Beat until smooth, about 1 minute. DO NOT OVER BEAT. Pour into greased cast iron skillet. Bake in hot oven @ 425′ for 20 to 25 mins. Serve warm with butter.
HINT: (1) I sprinkle more sugar on the top of batter before I bake it… (2) I add a few spoonfuls of shortening in the skillet and melt it on the stove top. This softens the shortening and also greases the skillet at the same time.

Oh, that looks like the way my grandma made her cornbread. And that nice crust REQUIRES a well-loved cast iron skillet.

Hi, I was anxious to make this recipe using my grandmother’s old iron skillet, but as I put ingredients together in a bowl I realized there is no measurement for the milk. Am I missing it somewhere or was it mistakenly omitted from the recipe?
