The Best Oatmeal Cake Ever

This oatmeal cake is the best ever and this is coming from someone who not a big fan of oatmeal.  Not only that, it is very popular among the men.  This was something that I cooked for the cowboys and they would tell my husband how much they enjoyed the dessert.  I personally think it borders the food porn side…..yeah, it’s that good!

INGREDIENTS:

For the Cake:

  • 1 1/4 c Boiling Water
  • 1 c Quick Oats
  • 1 stick butter
  • 1 c brown sugar
  • 1 c white sugar
  • 2 eggs
  • 1 1/3 c flour
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. baking soda
  • 1/2 tsp. nutmeg

For the Icing:

  • 1/2 stick butter
  • 1 c brown sugar
  • 1/4 c evaporated milk
  • powered sugar

DIRECTIONS:

Mix water, oats, and butter & let stand for 15 minutes.  Add remaining ingredients together in a bowl.  Add oatmeal mixture to the bowl and mix well.  Bake in an 8 x 11 casserole dish at 350′ for 30 minutes.

ICING DIRECTIONS:

Melt ingredients together in saucepan and cool.  Add powered sugar until thick enough to pour over cake.  Pour over HOT cake!  I usually take a toothpick and poke holes throughout the cake so that the icing sinks in…YUMMY!

OH.MY.GOSH…..this is SOOOOOO good!!!  Enjoy:)

    I much prefer the coconut and pecan frosting that came on my mom’s oatmeal cake. That made the cake. Otherwise, the cake recipe is about the same.

    This is the same recipe passed to me by my Aunt in 1953! You can add almost nay spice… Raisens , candied fruit, dry cranberries and nuts… use your imagination!
    My children often ran for the school bus with this in hand!
    For a basic this recipe can not be topped!

    For Diabetics type 2… try using 4 Sweet& Low (or other sugar substitute) in place of the white sugar…and in place of the Icing try a sprinkle of cinnamon.
    There are a number of tricks you can try as your tastes may very!

    Yes, I am assuming you sprayed your pan with oil before baking the oatmeal cake. I am trying it now so will let you know how it turned out. A friend of mine baked one for a church dinner and it was a hit so I am trying your recipe as I haven’t gotten hers as yet.

    Fantastic cake! I followed the directions exactly and it turned out perfect although I did have to cook it a touch longer than the 30 minutes ( I used a 2″ deep half hotel pan to cook it in). I am a kitchen manager and make all of the desserts. I will definately add this to my rotation. If anyone asks I will give them the URL to get recipe. Thank you. -Tony
