We are bacon-a-holics around here. We eat bacon for breakfast, at lunch, in a pot of beans, and of course with salad. You know the best thing about bacon? All year long she would teach me how to make, what she Called “Easter Breakfast Basket Combo” She made scrambled eggs, Ham, &Cheese, All mixed together with a tab bit of salt&pepper. Then she put it in a bowl and used sour candy stings got the handle. Also made potato Pancakes on the side. She always told me never forget the reason for Easter and Always remember our father, Who makes this all possible. And that is my Family Tradition. On Easter if the weather permitts we gather all of our family togeter at Granny’s in the woods close to the fishpond. The uncles build a table out of fence wire stretched between to trees. We have grown to 3 tables with all the family coming. Our family is large and this is the only time we all get together. We have some of everything to eat. I bake a ham and make potato salad my daugher makes baked beans and then we have hot dogs for the little ones who want itthen there are lots of cooked and raw vegetables, chicken and dressing, chicken and dumplings, sweet potato casserole, corn,cooked many ways, cornbread and cakes, pie,s and puddings. Lots of iced tea. The older children and men and women play softball. The young have a rim set low on a tree to place basket ball with. The girls play baby and mamma and we just get together and catch up and eat, eat, eat. It is the highlite of our year. The first thing we do when everyone gets there and before we eat, my uncle who is 94 this year will give us a devotional and we all join hands with someone while we pray. Easter is a special religious memorial to us and we can’t leave God out. We celebrate that our God is not dead that Jesus arose and now dwells at the right hand of His Father, God and we honor Him with this day as a family.

When we lived in California Easter Brunch was always at our house. With 7 grandchildren we managed the Easter Egg hunt by giving each child a basket with a colored ribbon and they could only pick up the eggs that matched the ribbon color. No squables or tears and we all could relax and enjoy each other.

When I was a girl breakfast consisted of fried eggs, a meat such as ham or bacon or sausage, cooked cereal, toast or English muffins and sometimes pancakes or waffles and an assortment of jellies and jams. Not for the faint of heart, then when my children were growing up, school mornings was usually cold cereal, english muffins and OJ and hot chocolate but weekends were always Grandma’s breakfasts. On Easter Sunday we go to sunrise service then home where all the women gather in the kitchen and make an awesome grandma breakfast while the children hunt for eggs in the back yard with their dads. After breakfast then is time to hunt for any baskets that Easter Bunny might have left around. EB can be very tricky about where he leaves baskets but they are always found except one Easter the Dads had hid them the night before and the next day one was missing. Noone could remember hiding it anywhere so a dad was dispatch to Wal Mart to get another one while the hunt went on at home. Never found the basket until about a week later when it was discovered in the garage under the workbench where it apparently had gotten kicked. Not wanting to have questions about EB hiding skills (or reality) I was forced to eat it myself with my neighbor. Somebody had to do it.

main entry: I fry up a bunch of crispy Oscar Mayer Bacon and use that deliouse drippinngs from it in my skillet to make some country white gravy by adding 3 tablesppons of Bisquick then add 1 cup of milk salt & pepper and boil it just breifly for a yummy gravey which by the help of Oscar Mayer Bacon let me make the best gravey you can serve then I make up some hand made Bisquick Bisquits made by adding buttermilk and serve with fresh big red tomatoe slices and some scrambled eggs yum! This tradition makes me melancholy because it reminds me of my sibling(he’s now gone). Every year at Easter we always tried to peel our hard boiled egg in one piece(just like in the Easter Bunny special). We’d drive our mom nuts opining right before we’d eat it “such a pretty egg, seems a shame to eat it, heck that’s what easter eggs are for “and then we would thwack it against the table and then try to peel it in one piece.For.Every.Single. Egg. It’s a fond little story I’ve shared with my kids so a little piece of my brother still lives. I don’t have anything I traditionally make other than those eggs(for dying).

Easter breakfast is pretty light, but nutritious, because the adults fast the day before. But, after we celebrate Jesus’ resurrection, we feast!

We have the traditional bacon and eggs breakfast every Sunday, but on Easter, and other holidays too, we make sticky, gooey cinnamon roles for the younger ones, and they love it!
