Chorizo & Egg Taco Boats Big Game Appetizer

I know I’ve told y’all like a million times, but I’ll say it again. I’m such a HUGE football fan!  You know that means, the last thing I want to do on game day, is cook! Easy and fast is how I roll so that I can enjoy watching football with everyone else.  That’s where these Chorizo & Egg Taco Boats come in.  I know what you’re thinking….chorizo and egg appetizers? YES, and I’ll tell you why!

Chorizo is a heavily seasoned type of pork sausage.  You can use it in many recipes and it’s very flavorful! As a hispanic family, we eat chorizo often.  Now eggs are a great filler and an 18ct is usually just under $3 bucks.  I can feed a lot of people with an 18ct of eggs, especially when it’s mixed with a flavorful sausage like chorizo.

Normally I’d make some tortillas but on game day, and especially during the big game, I am NOT going to be in the kitchen making tortillas. Nope, ain’t gonna happen.  This is where Old El Paso Mini Flour Tortillas Taco Boats come in handy!  They are so stinkin’ cute but what I love is that they are the perfect appetizer size to just grab and eat!  You know everyone is gonna be piled in the living room in front of the TV for the game!  This makes it easy for them to grab a couple and go sit down.

These chorizo & egg taco boats can’t be easier to make either, y’all.  You’re simply gonna cook your chorizo, scramble in some eggs with it, fill your boats, and top with cheese.

Something fun you can do it set up a little “taco bar” with all the fixins.  We used Old El Paso sliced jalapenos, black olives, and green onions but you could set up several bowls with goodness so that everyone can grab a taco boat and top it how they want.

You can find these and other Old El Paso products at Walmart by the mexican food aisle.  There’s a whole bunch to choose from!

So to recap…..Chorizo & Egg Taco Boats are filling, easy to grab-n-go, flavorful, and great for letting people pick what they want to top them with.  That’s why the make the perfect, big game appetizer!

Chorizo & Egg Taco Boats Big Game Appetizer

Serves: 20 taco boats
Ingredients
  • 18ct eggs
  • 12 oz of chorizo
  • 1 package of Old El Paso Flour Tortillas Taco Boats (mini)
  • grated cheese
  • choice of toppings; black olives, green onions, old el paso jalapenos (all optional)
Instructions
  1. Cook your chorizo.
  2. While your chorizo is cooking, chop up and onions, olives jalapenos, etc that you'll be using. Also lay out your taco boats on a sheet pan.
  3. Preheat oven to 325'.
  4. When chorizo is done, pour in your eggs (scrambled in a bowl), and cook until done.
  5. Spoon into taco boats and top with cheese.
  6. Bake in oven until cheese melts, about 5 minutes.
  7. Serve with your choice of toppings, taco bar style.
