Banana Nut Oatmeal Cookies
  • 1 ½ cup Flour
  • 2 tsp Cinnamon
  • 1 tsp Baking Soda
  • ½ tsp Baking Powder
  • ½ cup Butter, Melted
  • ½ cup Brown Sugar
  • ½ cup Sugar
  • 1 cup Banana Puree, about 2 Bananas
  • 2 cups Rolled Oats
  • 1 cup chopped Almonds, (or any other nut you prefer)
  1. Preheat oven to 375 degrees
  2. Grease cookie sheet and set aside.
  3. In a medium sized mixing bowl, combine flour, cinnamon, baking soda and baking powder. Stir together for a few seconds, then set aside.
  4. In a large mixing bowl, combine melted butter, brown sugar, sugar and banana puree. Mix on medium speed for 30 seconds to a minute.
  5. On low speed, slowly add the flour mixture ½ cup at a time. Increase speed to medium and mix for about a minute.
  6. With a large spoon, gradually stir in oats and almonds (or nut of your choice). Mix just until everything is incorporated.
  7. Spoon batter onto greased cookie sheet and flatten just a little bit with the back of the spoon. You can size these as you wish, just make sure to spread about ½-1 inch apart.
  8. Bake for 12-15 minutes. Let cookies cool on pan for a minute or two, then remove and let cool on a wire rack.
