As I shared my heartfelt memories of our family meals using Hamburger Helper®, it also made me think about how we’d throw some things together and call it Hamburger Helper®. To this day, my boys LOVE rice, brown gravy, and ground beef together. It’s their second most requested meal and it all started from a Hamburger Helper®!
Since reflecting on these moments, I thought it might be fun to create a recipe using Hamburger Helper®, just like I did in the old days. We’ve had a few cool evenings thanks to the glorious rain and so I thought making a “goulash” using Hamburger Helper® Four Cheese Lasagna, would be perfect! The great thing about any goulash, is there are no rules and when you’re rationing, you can just throw whatever you have, in there, so there’s no buying special ingredients. If you have them, toss them in, if you don’t, it doesn’t matter! We’re gonna throw everything but the kitchen sink into ours!
I have learned that you can make just about anything into a meal and when you’re rationing with a family that includes 4 fellas, you gotta make every ingredient and dollar stretch. That’s why Hamburger Helper® is awesome. It gives you ingredients, flavor, and value.
If I had potatoes on hand, I would have thrown those into this mix but I was actually pretty limited in the pantry so I used the basics; corn, green beans, and fire roasted tomatoes. We loved this goulash! It has everything we love about a goulash but also had the tasty lasagna flavor. Serve with a salad or breadsticks and you gotta a meal to feed an army!
Now I have to admit to y’all….I don’t really measure much but I’m gonna give you the best guess I can. In truth, I doubled mine because I have ALL my boys home this week….that’s a 21, 19, and 8 year old, along with my man. They eat a lot! As always, you omit or add to your own tastebuds! Enjoy y’all! - 1 box of Hamburger Helper® Four Cheese Lasagna
- 1 pound ground beef
- 1 can green beans
- 1 can of corn (I used a frozen corn)
- 1 can fire roasted diced tomatoes
- about 6 cups of water (give or take)
- salt and pepper to taste
- Brown and drain ground beef.
- Add the sauce mix in your Hamburger Helper® box, setting aside the noodles.
- Add green beans, corn, tomatoes, water, and mix.
- Simmer for about 20 minutes.
- Add noodles and simmer for another 10 minutes.
- Serve with salad or breadsticks!
