How many cookbooks do you own that you don’t use? It’s okay, you can admit it, I won’t tell! Awhile back I decided to purge cookbooks and only keep ones that I knew had recipes I’d use. One of them was the 5-Ingredient cookbook. If you’ve followed me long enough, then you know I’ve mentioned this before. These Lemon Cake Cookies came from this book and they were a hit over the holidays y’all!
It’s always fun putting together goody baskets, for the people, over the holidays. My heart wasn’t in it as much as I had hoped but I forced myself to do it. One of the things that my mother did was always got us Mrs. Prindable’s Apples for Christmas. It had been a tough year of grief since her passing and I didn’t think I had enough oomph in me to do anything for anyone but then an email came through about the apples. I decided to get the apples to give to others as my mom had done for us all those years but I didn’t want to give just an apple so I made candy and baked cookies, Lemon Cake cookies to be specific.
This 5-ingredient cookbook has been one of my favorites for when I need something easy and fast! There are several cookie recipes in it but I ultimately went with the lemon cookies to add some diversity to my baskets of goodies.
These are cake cookies y’all, using 5 ingredients so I ain’t gonna lie, I don’t have much to say about them, other than I got lots of compliments on how good they were!  So instead of talking up the cookies, let’s talk about baking goods and giving. We always use the holidays as a time to give and serve but what about the 11 months of the year? Wouldn’t it be great to surprise your neighbor or mail carrier with some cookies? I guarantee they’d love it and appreciate the fact that you thought about them. Take some cellophane wrap to put them in and tie them up with some cute ribbon! Viola! You can even go all out by including a card with a sentiment on it, maybe something encouraging or complimentative. What a great way to lift someone up! Do any of y’all do this during the year that’s NOT holiday related? The batter, for these, is on the thicker side. If y’all aren’t using cookie scoops, well, you’re super lame. They are the handiest gadgets ever invented for cookies!
- 1 box lemon cake mix
- 2 eggs
- ⅓ cup vegetable oil
- 1 teaspoon lemon extract
- ⅓ cup confectioners' sugar
- Preheat oven to 375'
- Mix cake mix with eggs, oil and lemon extract until well blended.
- Drop dough by the spoonfuls into a cowl of confectioners' sugar.
- Roll them around until they're lightly covered.
- Place on an ungreased cookie sheet.
- Bake 6-9 minutes, til golden.
