Hmmmm, I’m not sure how maple and bacon cookies are going to taste but they sure look good! If you make these, please let me know. I would love hear how they turn out for y’all.

INGREDIENTS
- * 1 c. butter or margarine, softened
- * 3/4 c. brown sugar, packed
- * 3/4 c. sugar
- * 2 eggs
- * 1 t. maple extract or 1 T + 1 t. maple syrup
- * 2 1/2 c. flour
- * 1 t. baking soda
- * 1/4 t. salt
- * 1/2 – 1 lb. bacon, cooked, crumbled and well drained
DIRECTIONS
1. In a large mixing bowl, beat together butter or margarine, brown sugar and sugar until fluffy. Stir in eggs and maple extract or syrup. Beat for 1 more minute.
2. In a small bowl, combine flour, baking soda and salt. Stir to combine and add in batches to mixing bowl. Beat just long enough to incorporate.
3. By hand, stir in the bacon pieces. Drop by tablespoons onto cookie sheets. Bake at 375 degrees for 8-10 minutes, until golden brown.

Intriguing. Are they best consumed warm? Must they be refrigerated due to the bacon? So weird! But maybe really yummy?

They sound unusual, but you can get chocolate bars with bacon in them, so who knows? The salty/sweet combo could be good!

I made this recipe over the weekend. I did make a couple minor tweaks: I reserved the bacon fat from baking a pound of bacon in the oven on a wire rack at 425 for 18 minutes and used 1/2 cup of that in place of 1/2 of the butter, after letting it congeal in the fridge. I made 48 cookies each 23g which I baked at 375F for 10 minutes on cookie sheets lined with parchment paper. At 10 minutes I wasn’t sure if they were completely done as the dough still looked a little wet so I let them sit on the cookie sheet for an additional 4 minutes on the counter before moving them to wire racks to cool completely.
You should really give them a try. They are unreal. Imagine you ordered a Belgian waffle at a diner with a side order of bacon. You fork a piece of the waffle and a piece of the bacon, dip lightly into the maple syrup and bite into it. The exterior is crispy but the interior is soft. So far everyone who has tried them has absolutely loved them.

I made these cookies this afternoon, and am not quite sure how I feel about them. I love maple, and feel like they may have been more flavorful if I’d added a bit more syrup. The consistency of the cookie, though, is excellent! I’m thinking of nixing the syrup and bacon next time and adding chocolate chips instead…

Made these tonight and they are really good actually. I got the bacon super crispy and then went and used real maple syrup for these.

Made these cookies withs some alterations. I replaced half the butter with sugar-free applesauce. Doubled the maple syrup. Rubbed powdered sugar on them for cosmetics. It’s pretty good. Not a show stopper but a good addition to the holiday cookie plates we give away.
