Recently, I was asked by Cookwell to share some recipes that could use a healthy makeover and one recipe I chose was my mom’s Buttery Shrimp Scampi with Linguine. It is an absolutely delicious recipe…but uses half a cup of butter. Cookwell offers many varieties of cooking oils giving you the opportunity to create a healthier, more tasteful meal. And that’s where the Shrimp & Vegetable Pasta comes in.
Cookwell sent me a few things to get my cookin’ on and I immediately noticed something about their labeling. It had circles; one set for temperature and one for flavor. I have always wondered about which temperatures were suitable for which oils and never knew so I was excited to see this visual. Please tell me that I’m not the only one who is oil clueless?? Their website is fabulous! You click on which cooking style you’ll be doing and it will give you the cooking oils that are best for that particular method. When I clicked on Dip, it gave recommendations like you see below.
And if you look closely at the basket, you’ll see a recipe card with this recipe on it. I love that they turned it into a recipe card for me!
For this recipe, Cookwell said that the Canola Oil & EVOO blend would be the best for healthy & flavorful cooking. Instead of regular linguine, they went with whole wheat spaghetti. And while they did use a smidge of butter, they incorporated lemon juice as well which goes perfect with shrimp.
When I first started cooking this, Truett wrinkled his nose up at the tomatoes but after all was finished, he ate two platefuls, even saying, “I ate the tomatoes too mom. They were really good.”. Toby just loved the dish. He said it was feeling and he felt great about what he was eating! Overall, this was a FAST, healthy, filling, and flavorful meal that every single person in our house loved. Two thumbs up from the Falcon bunch!
Shrimp & Vegetable Pasta

This is a healthier alternative to Shrimp Scampi with Linguine.
- 3 Tbsp Cookwell Canola Oil $ EVO Blend
- 2 Tbsp butter
- 2 Tbsp Garlic minced
- 3 Tbsp Onion minced
- 1 cup Cherry Tomatoes
- 2 tsp Lemon Juice
- 1/4 cup Fresh Parsley chopped
- 8 ounces Whole Wheat Spaghetti
- 1 lb Shrimp peeled and deveined
- 1/4 tsp Black Pepper
- 1/4 cup Parmesan cheese grated
- Prepare whole wheat according to package directions, drain.
- Place butter, olive oil, tomatoes, garlic and onion into a skillet over medium heat, sauté for 2 minutes. I broke tomatoes up by smashing them a little bit.
- Add shrimp and cook until pink, about 4 minutes.
- Add remaining ingredients, including pasta and toss all to coat well.
