5-Minute Mex-Tex Dip

With the big super bowl game coming up, I wanted to share one of favorite dips with you; 5-Minute Mex-Tex Dip. I also love that it literally only takes 5 minutes to whip up.  There are several variations of this and my sister-in-law, Bell, was the one that introduced this one to me.  It’s extremely simple and people who don’t even like cream cheese, love it.  Wheat thins are a perfect dipper for this too.  If you’re not into Wheat thins (lame-o), then you could also try some fritos.

5 minute texmex dip

Even though this is a small helping, I still used my Kitchenaid Mixer to ensure a creamy dip was created.  Depending on your preferences, you may want to save the Ro*tel juice and make it a little thinner. We love it thick though so we don’t use the juice.   Corn is a great addition to this dip, but just the Ro*tel and cream cheese are a match made in dip heaven.

Simply mix one can of drained Ro*tel with 2 packages of Philadelphia Cream Cheese.  If you want it spicier, then only use one package of cream cheese.

    Yummmm! I love dips…of any kind, human or food. Yeah, corny, I know. But I couldn’t resist it. There was a sign on a road close to where I live…all the sign said was “Dip” I tried like everything to get my husband to stand beside it and let me take a picture, but he never would. Sadly, the sign is now gone.

    That looks yummy and so rich! A while back when I was having some people over I wanted to serve tortilla chips and salsa but realized I only had about half a jar, so I took it and mixed in about 3-4 Tbsp. of cream cheese, some frozen corn and a can of black beans and it was so good. This reminded me of that, but with a lot more cream cheese.

    Wow! In just 5 mins we could make a tasty snack. This could be a great stuff to take when you watch in front of your television watching favorite basketball team playing.

    I’ve never had this with corn. I’ve actually never know another person who makes this! Its my best friends and my favorite go to comfort treat when we are together!

    Tried this version, it’s pretty good.; We do a similar dip and add hot breakfast sausage, YUM!

    Hmmmm…corn! Interesting. I’ll have to give it a try.

    I make something similar with cooked sausage and heat the cream cheese and Rotel. Same concept. As long as there’s Rotel involved, it will be delish!
