No Milk and Lunch for Two

By A Cowboy's Wife | September 28, 2010

I was craving oatmeal this morning but I only like it using milk vs water.  Since I had no milk, I chose to eat a whole wheat bagel with a very tasty low fat jam. I threw in a banana too just because I thought having some fruit would be a good way to start the morning.  I don’t normally have jam for breakfast but the truth is, I was having withdrawals from not having soda for 3 days, which might almost be my record, so I need some kind of sweet fix.   Anyways, the bagel was delish and whole wheat is really starting to grow on me.  Baby steps……

After a horrible morning of working with my tech gal trying to fix all the errors and mishaps of my site, I was starving by lunch, not to mention thirsty too because I don’t think I had drank any water all morning.  Because the big boys aren’t home during the day, I keep quick and easy meals on hand for me and the hubs. Truett either eats with us or something he’s picked out himself like PB&J and apples slices.

Today, I chose Steak Gorgonzola from Stouffer’s.  It’s from their new Sautes for Two line.  I have to say, the smell of the roasted red peppers as soon as I opened the package was amazing. Not sure I’ve ever smelled something so fresh & flavorful from something still frozen.  It literally takes less than 15 minutes to make which was perfect because we had hay to haul to the yearlings, a house to clean, and some mineral to put out and that doesn’t even count chores that needed to be done.    –Back to the food.  I loved the flavor of this. I mean, it was truly packed with flavor.  There was also something elegant, yet completely simple & comfortable about having roasted red peppers, steak, and pasta all for lunch with my man.

I made sure to mix my water up and take with me while we finished working and doing chores.  I’m really bad about not drinking enough water and try to keep a 32 oz mug with me at all times full of water.  We got chores done and were tuckered out.  I decided not to eat. I know…I should have eaten something but I just wasn’t feeling it.  My husband ate my FIL’s house with Truett and my older boys ate with their friends in town.  I was home alone in the peace and quiet and just wanted to rest. It was a long weekend for us with Truett’s birthday, football, and rain.

How was YOUR weekend?  Do anything special? Eat anything delicious?

I’ve had those bagels before and they are good. We are trying to eat more whole wheat too but it doesn’t do much good since we eat greasy hamburgers at the football games. teehee

I can almost smell those red peppers! I think that is something my husband and I would eat on a busy day too. I’ll have to check our store for it. Have a great day Lori.

Whole wheat bagels is a great idea. I think that I might try them. You really make those Stouffer’s dinners look incredible.

That one looks delicious. I am in a hurry tonight and need something quick. I think this might be it. I’ll just take it out of the box so the hubby won’t know.
