One of the best things about Summer is all the fabulous, fresh produce. You can buy everything from vibrant bell peppers to juicy peaches this time of year and I love it. We go through a lot of fruit around here with Toby and Truett so I’m always mixing it up a bit so that they don’t get bored. Today I made fresh fruit salad with blue jello, just for Truett! It perked him up and made the fruit a little more interesting to him.

Our Walmart, while a supercenter, is still smaller than others. We don’t quite have the huge selection that you’ll find at others but it has improved greatly, both in selection and quality. We really don’t have farmer’s markets around here either and the other grocery store is too expensive so I’ve always gotten our produce here. People make this in so many different ways but for Truett, I’m keeping it simple. I was introduced to fruit jello salad during the holidays, at my dad’s mother’s home. She made it every year, along with some other delicious goodies. I’ve made it for our family every year since. Some people put coconut and pecans in this and some just use every single piece of fruit they can get their hands on. I used Truett’s faves; blueberries, strawberries, grapes, and bananas. It’s super simple and a perfect treat for the kiddos.


- 2 large boxes Blue Jello
- 1 cup (each) Fresh Fruit of your choice, (I used strawberries, blueberries, bananas, and grapes)
- 1 tub cool whip
- Prepare jello as directed. Cut up fruit when jello is set.
- When jello is firm, add fruit, tub of cool whip, and mix together. Refrigerate until ready to serve.
