Ice-Box Fruit Cake that Everyone Will Eat and LOVE!

I know, I know….you see fruit cake and you’re like, ummm, noooo thank you!  Wait y’all.  Don’t judge a fruit cake before you taste it.  Granted there are some wonderful fruit cakes out there but there are also many that, well, don’t suit the taste buds so much.  This ice-box fruit cake is a recipe that is absolutely delicious and I can’t wait to share it with you! First, I wanna share our volunteer day at our local food bank in Abilene, Texas.

Sometimes we tend to take things for granted until we are put in that situation or volunteer our services and see firsthand the impact it has. Food hunger is something I think about all the time and causes to support it, have always been close to my heart.  Our local food bank distributes food to various locations, for those in need in that particular area.  This is my second year helping during the Fisher Nuts volunteer day, Fisher Shares & Cares, and it’s been a great learning experience for Truett to have, as well as, myself.   If you get the chance to do this, please, do it!  Fisher Nuts makes an incredible $40,000 and you know that goes  a LONG way with a cause like this.  I’m grateful for the opportunity and the partnership I have with Fisher Nuts.

Everyone that volunteers is assigned a task and if you follow directions, things go very smoothly.  There are huge bins of food, some cans and some boxed.  We take each of those items out, clean it off, and put in the designated boxes.  If we find cans with defects in the top or bottom and opened boxes, then they have to be tossed.  From there it moves on to another station where they are stocked and distributed to those who need it.

I first heard about and tasted this recipe from my mom’s sweet neighbor, Sandra.  She’s this lovely elder that always has wonderful stories and just gets tickled at the littlest things.  She’s a gem and immediately brings a smile to our face when we’re around her!  She was kind enough to give me a copy of her family cookbook, filled with recipes that have passed down and made through generations.  How lucky am I to get my hands on it?!!!

The name ‘ice-box’ clearly tells you it’s a recipe that’s been around for a bit and when I tasted a piece of this, that Sandra made, I wanted more! HOLY COW IT WAS GOOD!  I was not expecting it to be THAT good but after making it and seeing all the ingredients, I now know why!  And as I’ve mentioned before, I use Fisher Nuts brand for many reasons but one of them, is that they are the ONLY national brand of recipe nuts that is entirely without preservatives. I know a lot folks care about things like that!

I hope y’all enjoy the recipe.  I told you it wasn’t the average fruit cake. It’s amazing!! Enjoy!

Ingredients
  • 1 lb. graham crackers, crushed
  • 1 lb. small marshamllows
  • 1 lb. Fisher Nuts Chopped Pecans
  • 1 bottle of maraschino cherries
  • 8 oz. whipping cream
  • 1 lb. dates, chopped
  • 1 box coconut (or about 12 oz or so)
Instructions
  1. heat cream and cherry juice.
  2. Put in marshmallows and dissolve over low heat, stirring constantly.
  3. Add remaining ingredients and mix well.
  4. Form into loaves or a roll and wrap in wax paper.
  5. Let chill at least an hour. Slice and serve.

    My mother got this recipe in the 1950’s and made it several times. I’ve made it a few times. It is moist and delicious!

    I have made a version of this since the 50’s. I have looked and tried to find this recipe every way even Google. Thanks. My Grandkids won’t eat fruit cake but hoping they like this one 😍

    Does one have to drain the cherries well? And how much cherry juice?

      You’ll drain the entire jar of cherries and heat the cream and juice together. I just used a standard small bottle of cherries. The cherries go in later when you mix it all up.

    I love collecting recipes. My daughter thinks it’s nuts but if she would let me use her printer it would be easier instead of writing all of them. I can’t wait to try this one.
