Simple Ranger Cookies with Craisins, Pecans, and Coconut

Many of my readers are moms who work outside of the home. They are tired from working all day but still want fresh cookies with dinner, without the fuss.  These ranger cookies are your cookies!

Ranger Cookies with Craisins, Pecans, and Coconut

I love to bake from scratch, really, but let’s face it y’all…we don’t always have time.  It doesn’t seem like putting flour, sugar, etc in a bowl would make much different in time but it actually does.  It’s just enough work that will keep a lot of people from baking at all.  So the easy fix is a package mix.  Some of you are gasping for air while others are screaming YES, YES!   Hey, whatever floats your boat I say.  For me, using the oatmeal package cookie mix was a no brainer.  And by adding in the other ingredients, you’re really kicking the cookies up a notch!

Ranger Cookies Ingredients

I used my KitchenAid mixer and just threw in the oatmeal cookie mix.  Once it was all mixed, I slowly mixed in the Craisins, pecans, and coconut.  Used my cookie scoop and baked!  They are so easy to make and tasty that we make them pretty regularly around here.  I also find that buying the Craisins at Sam’s Club is much cheaper than at your local grocery store. MUCH cheaper!   Enjoy y’all!

Ranger Cookies

Simple Ranger Cookies with Craisins, Pecans, and Coconut

Ingredients
  • 1 pkg Oatmeal Cookie Mix
  • 1 pkg Craisins
  • 1 cup Fisher Nuts Pecan Pieces
  • ½ cup coconut
Instructions
  1. Follow directions on oatmeal cookie mix.
  2. Add in craisins, pecans, and coconut and mix well.
  3. Bake according to package directions.
