Spicy Black Bean Quesadillas for Lent

Lent is observed by people across the world. It’s a 40 day special time for prayer, sacrifice (like giving up DP), and penance.  While fish tends to be quite popular during this time, I wanted to share a very quick & easy lent recipe that is not fish related and that the kids will love.  Quesadillas!  And since Toby is on his health kick, we thought we’d change up the ingredients a tad to make it just a bit a wee bit healthier.

Low Calorie Black Bean Quesadilla

You simply mix low calorie mozzarella cheese, drained black beans, and green chilis together and pile in a tortilla.  We opted for low cal whole wheat tortillas because that’s what Toby prefers.

As someone who found God just over a year ago, this is a special time for me.  I truly embrace this time with extra prayers that I might not normally do.  I ask forgiveness consistently and pray that God gives me the discipline to stay faithful, positive, encouraging, and bold in my attempts to share the Word.  It’s a time to reflect on who I am and what I can do for our Lord Jesus.  It’s a huge reminder of what He did for us.

    These look delicious and filling– a healthy meal even when it’s not for lent. One thing I learned during hard times that I still do because it’s healthier is to use beans in place of abut half the meat in some recipes. Black or Pinto beans, some smashed and some whole, work well with about half the meat you’d normally use in any Tex Mex recipe.
    BTW–You mentioned a trip to King Ranch somewhere along the way–have you tried King Ranch Chicken, yet? Yummmmm!

    I am a big user of beans in my house & black beans are a personal favorite. People always think of fish in relation to Lent, but this is a great option.
