Summer Salad – Broccoli Slaw with Chicken and Almonds #ThinkFisher

Because of the Texas heat, we try not to use the stove or oven for long lengths of time.  This means meals are quick & easy.  In an attempt to be healthier, we try to eat a light lunch so today, I’m bringing you Broccoli Slaw with Chicken and Almonds.

Broccoli Slaw with Chicken and Almonds

I got this recipe idea from my good friend, Vicki, and I was surprised I liked it to be honest.  Sometimes my brain just doesn’t even think and so it never occurred to me to saute my slaw, because otherwise, I probably wouldn’t eat it.  Since our son, Toby, is a health nerd, I’m always on the prowl for something new to try.  And if you don’t already know, Toby keeps bags of almonds around as a healthy snack and for meals. In honor of him, I added some Fisher Nuts Almonds as a crunch topping.

Fisher Nuts and Slaw

I would have preferred to use almond slivers but 1) we were out of stock and 2) it didn’t make much sense to buy them when we already have bags of almonds at home.   Toby always tells me to buy the whole natural almonds too because they are healthier.  They don’t have the additional salt, etc that you’ll find in other varieties.

Fisher Nuts Almonds

We decided to just chop a few of the almonds up to make things simple.  The seal bag always keeps them fresh and I love how fresh tastes.  You can always tell in flavor when something is or isn’t sealed up good.

Now you could eat this as is, cold or warm but whatever you decide, I highly recommend some soy sauce.  I have never been a fan of soy sauce but when I tasted this sauteed broccoli slaw, with just a little bit of the sauce, it was absolutely delicious.  Hope you guys enjoy and I hope y’all are having a fantastic Summer.  This may even be THE dish you take your 4th of July party! Easy, affordable, healthy, and delicious!

Broccoli Slaw with Chicken and Almonds

A tasty and easy summer salad that can be served hot or cold.
Recipe type: Salad
Ingredients
  • 1 bag of Broccoli Slaw
  • 1 large can of chunky chicken breast, drained
  • ¼ cup chopped Fisher Nuts Almonds
  • Soy Sauce (optional)
Instructions
  1. Saute your slaw and chicken together until warm. Top with Almonds and serve. For extra, juicy flavor, add soy sauce to taste!
