Sweet and Spicy Crispy Shrimp

INGREDIENTS

Marinade:
1/4 c. sambal
1/2 a lemons juice
1 T. vegetable oil

3/4 lb Shrimp peeled tails on
1/4 red pepper julliened
chopped chives

Coating
1 cup corn flakes smahed to a ruogh crumb
2 T flour
dash of salt, pepper, cayenne, smoked paprika
1/4 c. panko bread crumbs

1 egg
2 tsp. water
1/4 cup peanut oil

Drizzle:
1/2 a lemons juice
1/2 c honey
2 T soy sauce
2 tsp. sriracha

DIRECTIONS

Take cleaned shrimp and stuff one slice of the julliened peper down the hole from the removed vein. Mix marinade and add shrimp. Marinate for at least 1/2 hour.

Mix ingredients for drizzle.

Combine alll the ingredients (except panko) for the coating in a food processor and pulse until thouroughly blended. Add panko.

Beat egg and water. Heat oil on med high heat in a large skillet. Dip shrimp into egg then in crumb mixture. Repeate in egg and crumb mixture.

Add shrimp to skillet and cook about 2 minutes per side. Remove with tongs. Arrange on plate and drizzle the honey and soy suace mixture over. Garnish with remaining pepper and chopped chives.
