Anna’s Squash Ghoulash

By A Cowboy's Wife | July 15, 2008

EDITED: The giveaway is over.

I had planned on making a Texas style squash casserole but my man requested this because his mother used to make all the time.  Since she is no longer here with us so I am more than happy to keep the recipe going!

It’s super easy because I am super easy..no, not that way!  This is simply a variation of regular ghoulash.

INGREDIENTS:

  • Squash (2)
  • Potatoes (I used new potatoes but you could do russet and peel them.)
  • Tomato Sauce
  • 1 Can of Tomatoes w/ green chilies
  • 1lb hamburger meat
  • salt, pepper, and garlic powder

PREPARATION:

Brown your hamburger meat.  While meat is cooking, slice up squash and dice taters into chunks.  Add remaining ingredients, season to taste and cover with water.  Boil the heck out of it until taters are done.  I told you it was easy!!!!

Yeah, I know…I left some of the ingredients out of the picture….sorry!  I’m busy with 3 kids, a husband, a father-in-law, and trying to get ready to leave to SF!

Cooking0511

This is where you’re supposed to slice and dice baby!  Oh, and check out that snazzy Chopper knife :)  (hint, hint)  Purrrrty!

Oh, and just in case you missed the Chopper above, here it is again:)

Okay, now we are browning meat.

and pouring in all the remaining ingredients, including seasoning.

And here is the “in the pot” before picture……

and here’s the served version!  Super easy man!!! Nothin’ fancy about it.

More knives from New West Knifeworks!

“The 9” from the Phoenix collection (happens to be a top chef knife people!!) and (it’s valued at $199)  HOLY COW!

and the 6″ Chef knife from the Fusionwood collection.  (valued at $99)

Gosh, you lucky dogs!  I would kill for those two!!!!    Both are beautiful and are the best kitchen knives ever!

Talk about craftsmanship.  I have the Chopper in the Fusionwood and the handle is gorgeous!  You can choose your own color and they are limited production folks so you won’t find them anywhere else!..except for the fine arts and crafts shows.

Banner is on my site. I would love ALL these knives, however, seeing I could only choose one, I would have to choose the “The 9” in Granite. I have bought so many knives like this and NONE work like they claim to. I would LOVE to have one of these, I am sure they work wonderfully.

Wow! I like the gentleman’s rancher steak knives. But one of those fusion knives would be nice, too. Quality knives are expensive, and it’s difficult to afford them.

Let’s see… You’re 32 and a stay at home mom married to a cowboy. Your oldest is 14. Does that get me an extra entry? I’m going to stumble this from my other computer where I have the stumbleupon toolbar installed. It’s easier for me to do it that way.

Without question the Phoenix knife is the one I would choose. It has the indentations that keeps the chopping materials from sticking to the knife, is well balanced, and besides….. I see it being used on almost every cooking show on TV. If it’s good enough for Paula Deen, it’s good enough for me. LOL

That 9″ Phoenix looks like a great knife. It doesn’t look like it comes in any other colors, but I like the fact that it is waterproof and the material the handle is made from is bacteria resistant. I cook a lot and appreciate the few good knives I have. I immediately wash and dry and put them away the minute I get done with them. NO dishwasher. No way. A good quality, sharp knife makes all the difference in the world. When I go to a timeshare for a week, I take my own knives. You can never find a sharp knife on vacation!!

I love the Fusionwood Chef 6″ with a Cowboy handle. Love all of the knives actually, I could really use a great chef knife, the only kitchen knives I have are the cheapo set my parents gave me in my “hope chest” that I’ve been using for over 10 years now, and I cook all the time (cut myself all the time too because they’re so dull)!

So, about you, your a stay at home mom trying to earn money and keep yourself busy through blogging. I’m a SAHM too, how do you make money blogging? We could use the extra funds but I don’t know how to make money blogging, wish I did.

I remember my home management teacher at the university stating that a person should “invest” in good knives, because they pay off in the long run. Less osteoarthritis and tendonitis in the hands, and a more beautiful product when you cook.

Hi there! Glad I made it back here before this ended! I really like The 9 Phoenix Knife. It is state of the art and I would use it all the time while I play Diva in the kitchen! I am constantly chopping vegetables, meat and seafood (I make a lot of stir fry’s) so I appreciate the convenience of owning fine knives, which right now I don’t so that why I am entering! As always, thanks for another terrific giveaway!

Hmmm. A paring knife, or a deli knife. I so need some sharp ones.
