These Chicken Pinwheels are a great idea for Bento boxes, as the kids head back to school. I’m pretty sure I’ll be making a few extra and packing a lunch box with double helpings for myself. HA!
Bento simply means a boxed meal. It’s basically the same as a lunch box. With me working in town more and Truett headed back to school, I plan to pack more bento box lunches. When you plan on making lunches like this, consider what you’re cooking the days before and make extra for leftovers.
For these Chicken Pinwheels, I batted my eyelashes and asked my husband to grill a few extra chicken breasts, when we cooked over the weekend. As I’ve mentioned before in our Grilled Chicken Kabobs post, we use Sanderson Farms chicken and I love that we have partnered with them! My husband was nice enough to make a few extra and when they were done and warm, I shredded them up. You could also use a knife to chop them. I then stored them in a baggie in the fridge until I was ready to use it.
The great thing about these, is that they need to be refrigerated overnight so you can make them the night before. The next morning, just slice them up and make your lunch! Super easy! We use ranch dip to make these but I got to thinking, there are SO many more ways you could change this up and still have pinwheels, just by changing the dip and adding an ingredient or two, like olives or tomatoes! You would just need to make sure they’re small so that it rolls up nicely.
We have a TON of bento boxes and lunch bags. We always keep new and used on hand for whatever reason. What can I say, some ladies like handbags, I like bento boxes! :) I love that we create our own. Truett likes pretzels and blueberries and I like fresh broccoli and cheese. What do you love?

- 4-6 Sanderson Farms Boneless, Skinless Chicken Breasts (grilled and shredded)
- 2 packages cream cheese
- Tortillas
- 1 package of ranch dip
- Mix your cream cheese and ranch dip together.
- Spread the cream cheese mixture all over a tortilla.
- Layer your shredded chicken on top of tortilla.
- Roll up tightly.
- Refrigerate overnight.
- Slice and serve.
