Sandwich Week – Sweet Spicy Chicken & Bacon Wrap

Earlier I shared the French Dip Roast Beef Sandwich with Caramelized Onion, today, a wrap.  Wraps are fun way to do sandwiches instead of the same ol’ bread slices and they make for a pretty presentation as well.

This recipe has 3 parts. The spread, the dressing, and the filing.  The dressing can be made ahead of time to save you some time.  Another great recipe by Chef John Li that I hope you guys all enjoy.

Recipe: Sweet Spicy Chicken & Bacon Wrap

Summary: Makes 6 sandwiches and is great on a hot day or as party food!

Ingredients

Guacamole Spread

  • 1 avocado
  • 1 Tbsp. Kraft Mayo
  • 1 Tbs. sour cream
  • 1 clove garlic, minced
  • 1 Tbsp. Chopped fresh cilantro
  • 1 lime, juiced (about 2 TBsp.)
Dressing
  • 1/2 cup orange juice concentrate
  • 3 chipotle peppers in adobe sauce, chopped
  • 1/4 cup honey
  • 1 lime, juiced (about 2 Tbsp.)
  • 1 small garlic clove, minced
  • 1 Tbsp. minced onion
Filling
  • 2 pkg. Oscar Mayer Deli Fresh Grilled chicken Strips
  • 1 cup roasted corn (about 3 small ears) or 1 cup roasted canned corn 2 roma tomatoes, diced
  • 1/2 cup diced onion
  • 1 cup diced Queso cheese
  • 1 cup shredded iceberg lettuce
12 slices Oscar Mayer Center Cut Bacon, cooked
6 12-inch sun dried tomato tortillas

Instructions

  1. In medium bowl, mash avocado with a fork. Add remaining Guacamole Spread ingredients and mix well. Add salt to taste. Set aside. Mix all dressing ingredients in large bowl. Add all filling ingredients to dressing and mix well with large spoon. Spread 1 generous Tbsp. guacamole spread on each tortilla. Spoon 1 cup filling onto center of tortilla. Place 2 slices bacon on top of filling. Roll up tortilla burrito style by folding in both ends.

    This was AWSOME!! My son & I literally gobbled this up! I thought I would have the little bit of left over in a salad for lunch the next day, needless to say I couldn’t find the “left overs”. So I did make just the dressing part of this recipe for my salad and was in heaven once again. (I’m not big on store bought dressings, and love just about anything with a “zap”!) I have found a new recipe that will stay available in my kitchen for the wraps and for my new dressing. Thank you!
